Eat Chipotle Everyday for Half the Price

Think the title of my post is a little too good to be true? Well, it’s not. It does take a little preparation though. I’ve tried to recreate the Chipotle bowl at home on numerous occasions. It tastes good but it’s not quite right. I know what you’re thinking …my version is never going to taste just how they make it at Chipotle. But, I’ve found numerous copy cat recipes online that have tasted fantastic, just like the restaurant. One I make all the time is La Madeline’s potato soup (I use non fat cream for this recipe).

Let’s break down the cost of eating at Chipotle every day. I usually have a veggie bowl with rice, beans, pico de gallo, corn, guacamole and lettuce that comes out to $6.77.

$6.77 x 5 = $33.85

$33.85 isn’t a ton of money but that can add up. If I did that for a month I would have spent $135 on lunch alone! No bueno.

So I discovered a way to cheat a bit. What I do is make my beans at home. I usually make enough for a month and freeze the rest. Since I’m a vegetarian, beans are a big part of my diet.

After my beans are cooked. I mix about a weeks worth of black and pinto beans into a container with a little salt, cumin, salsa and lime juice and I pack it up for work. You can make Chiptole’s cilantro lime rice pretty easily as well. Check out this recipe. I also pack up a container of my cilantro lime rice for work.

I go to Chipotle only once durning the week for lunch or dinner, order my veggie bowl, but ask for a few extra sizes of pico, corn and one side of guacamole.

I take the sides to work, mix the guacamole with another avocado add a little salt and voila! Chipotle toppings for my home made vegetarian bean bowl for the rest of the week all for the price of 1 meal!

Here is a tally of my total cost:

  • 1/2 bag of black beans . 50
  • 1/2 bag of pinto beans .50
  • salt, pepper, salsa, limes (I had in the fridge) – Free
  • Extra avocado – 1.00
  • Shredded lettuce – $1.00
  • Rice – $1.50
  • Cilantro – $.50
  • 1 Chipotle meal with all of my extra sides 8.25

My total cost for 4-5 days of  my home made Chipotle bowls is $13.25 which comes out to $2.65 per bowl. You can’t beat that! Even if you added meat the cost would still be much less then buying Chipotle everyday. Chipotle for lunch everyday for LESS THAN half the cost. Yes please!
