10 Min Recipe: Sausage and Black Bean Soup

Before I went vegetarian, this is by far one of my favorite quick and healthy recipes! It’s so good and under 200 calories a bowl and takes 10 minutes to make.

Ingredients 

  • 1 green bell pepper
  • 1/2 jalapeno (optional)
  • 1 package of turkey sausage
  • 1 can chicken broth
  • 1 can of black beans
  • small jar of salsa

Instructions

Spray a medium-sized pot with Pam and slice up half of the package turkey sausage and add it to the pot to brown. Then dice the green bell pepper and add it to the pot with the sausage to brown a little bit.  Add your chicken broth and bring the pot to a simmer. Next, un-can and drain your black beans in a strainer and add them to the pot. Last, add 1/4 cup of salsa. Stir the pot a few times and cover and let it simmer for 10 minutes. Now your yummy healthy soup is ready to serve! I usually add a little fresh diced jalapeno to it as well to make it spicy.
