Healthy Breakfast

Monday morning was my first Insanity workout. It was pretty crazy, but I think it’s doable. It doesn’t help that it was my first day working out in 2 weeks: ( After my workouts, I’m usually pretty hungry. Naturally my body wants to go straight for the carbs, but I’m trying to cut back. So  instead of my usual healthy breakfast taco, I opted for egg whites with homemade Pico de Gallo and 2 slices of turkey bacon. Here is the quick, healthy recipe:

 

Homemade Pico de Gallo

  • 1 tomato
  • ½ onion
  • ½ jalapeno
  • 2 tsp chopped cilantro

 

I diced my veggies and chopped my cilantro and mix everything together in some resealable tupperware so I can use the extra Pico later. I usually make my turkey bacon in the microwave. I cooked 2 slices on high for 2 minutes. While that was going, I added my homemade Pico to the skillet then I added egg whites. I scrabbled the Pico and egg whites together until everything was cooked and topped it off with some black pepper. In less than five minutes I had a fabulous, healthy breakfast!
