Quick, Healthy Breakfast

I’m always in search of quick healthy breakfast ideas and my latest is a stroke of freakin genius! Ok maybe not, but I thought it was pretty clever. I like stuff that I can warm up in the microwave or that I can grab and go. When I was at the grocery store, the frozen food aisle was fully of crappy, fat and calorie filled breakfast options. Then I thought, why don’t I just pre- make my own? DUH.

So I took my usual healthy breakfast taco recipe and premade a few the night before to warm up in the morning. Here is the recipe:

Ingredients for breakfast tacos

  • Whole wheat tortillas
  • Egg whites
  • 1/2 bell pepper
  • 1 jalapeno
  • ½ onion
  • Part-skim shredded mozzarella cheese ( its got about ½ fat and calories of cheddar)
  • turkey bacon
  • 2 small potatoes

Ingredients for salsa

  • 2 small roma tomatoes
  • 1 clove garlic
  • ½ onion
  • cilantro
  • 1 jalapeno

**This is the recipe for 1 taco, add more to each ingredient to make more than one**

Potatoes

I like to start with the potatos so while they are in the microwave I can do something else.

First I poke holes in a small potato with a fork and microwaved it for about 5 minutes, or until soft.

Then, I peel the skin off and cut into bite sized chucks and set aside

 

Turkey Bacon

Next, I cooked 1 slice of turkey bacon in the microwave on high for 1 minute.  I put it on a plate and cover the bacon with a paper towel. I like to make it this way because the paper towel absorbs some of the excess fat.

If you want more than 1 slice,  just add 1 minute per slice of turkey bacon.  Then, set your cooked bacon aside.

 

Egg white scramble

Heat a small skillet and add some non stick spray.

Next,  dice the bell pepper, onion and jalapeno. This makes more than you will need for one taco, so I usually add 2 tbs per taco.

Add 2 tbs of your diced veggies to the skillet to brown a little bit

Then,  add your egg whites. Add as much or a little as you want. I usually do about ½ cup per taco

Then scramble it all together ( be sure to scramble thoroughly since eggs whites tend to be a little watery)

Then I add my scrabble, a little potato, and a dash of shredded cheese to my wheat tortilla, wrap it in foil and put it in the fridge for the next morning. I wrap the turkey bacon in separate foil so it didn’t get soggy inside of my taco.

 

Salsa (optional)

I like adding some spicy salsa because all of those healthy ingredients tend to be a little bland if you don’t add flavor to them. Salsa is perfect, because its low in fat and calories and packs a punch!

I roughly chop my tomatoes, garlic, ½ onion, jalapeno (this is a lot of jalapeno so if you don’t like it spicy, then use less) and 2 tbs of cilantro to a blender and turn it on high.

I like my salsa a little chunky so I don’t puree it. Then, I salt and pepper it to taste.

There are a ton of ways to make salsa, but I prefer  this simple, quick version.

 

In the morning, I remove my taco from the foil, add my turkey bacon, place in on a paper towel and heat it in the microwave for 1:30. Then I add a little fresh salsa and add put it back into my foil and voila! A PERFECT, healthy breakfast on the go! If you eat in the car, you might want to forgo the salsa because it might be a little messy and there is nothing worse the rolling into work with a giant stain on your shirt!
