Healthy Shrimp Scampi Recipe

So, I found this yummy shrimp scampi flat bread recipe on CleanEatingMag.com. I nixed the flat bread and added squash and zucchini noodles. It came out amazing!

Ingredients

  • 1/4 tsp sea salt
  • 1 tbsp organic unsalted butter
  • 1 shallot, chopped
  • 3 cloves garlic, minced
  • 1 lb raw shrimp, peeled, deveined and tails removed, salt and pepper to taste
  • 1/4 cup white wine
  • 1/2 cup grape tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 organic zucchini
  • 1 organic squash

Instructions

  • Spiralize zucchini and squash, start boiling a pot of water and set noddles aside (Don’t boil them just yet)

  • Heat butter on medium. Add shallot and sauté, stirring often, until soft, about 3 minutes. Add garlic and sauté until fragrant, about 1 minute. Add shrimp and cook, turning once, until just opaque, 2 to 4 minutes. Increase heat to high and add wine. Cook, stirring (start the next step while liquid evaporates) for 2 minutes, until liquid evaporates add tomatoes and take off heat.
  • Add spiralized vegetables to boiling water for 2 minutes ( Be sure your water is already boiling or your shrimp will over cook in the sauce)
  •  Drain veggie noodles in a colander and place in a large bowl
  •  Pour shrimp and sauce mixture over noodles and top with Parmesan and parsley, salt and pepper to taste
