Crispy Zucchini Chips Recipe

Ever since I became a low carber about eight months ago, I’m always on the look out for yummy, healthy, low-carb recipes. When I stumbled across this one for zucchini chips,¬†I had to try it out. It’s really simple. The only downside is they take FOREVER to bake because you turn your oven down really low so it dehydrates them as opposed to baking them.



  • 2 large Zucchini
  • Sea Salt
  • Olive Oil


Preheat your oven to 225 degrees

Wash and slice your zucchini into thin slices using a mandolin or a food processor. You can do it by hand with a really sharp knife but it’s nearly impossible to get even slices.

Place your zucchini slices on a baking sheet covered in parchment paper


Drizzle with olive oil and sprinkle with 1/2 tsp of salt (you don’t need much)

Place in the oven for 2 – 2.5 hours (told you it takes forever)

They come out so crispy and delicious that it’s worth the wait.
