Healthy Vegeterian Breakfast Options

Breakfast is one of my favorite meals of the day!  Now that Ive switched to being vegetarian, Ive been looking around for some different healthy, breakfast options. Here are a few things I’ve been eating lately:

Scrambled Eggs and Veggies

Three eggs scrambled with organic bell peppers, jalapenos, green onions and spincah with wheat toast and a side of fresh fruit.

Tofu Migas

If youre dining out in Dallas you MUST try Dream Cafe. I had the “You’re so vegan” breakfast the other day. It was seriously yummy. It’s basically tofu migas. It contains scrambled tofu and red corn tortilla strips sautéed
with salsa and melted soy cheese, served with whole wheat tortillas, black beans, rice and a side of pico and guacamole. It was like a party in my mouth! and healthy too!

Spinach and Eggs

This is obviously not my picture, it’s really hard to take an appetizing picture of spinach and eggs! All of my pictures turned out looking like crap. This is my usual breakfast most mornings. I use organic baby spinach, 3 eggs, a little skim milk mozzarella and I top it off with a sprinkle salt, pepper and ground flax seeds in top too for some added omega 3’s and fiber.
