Want to know how to eat healthy on auto pilot? Meal preparation! I cook all my food for the week on Monday evenings. Most people opt for Sunday, but my Sundays are kind of packed and I like to try and enjoy the little bit of down time I have. I find that prepping my meals for the week sets me up for healthy eating success! This way, there are no excuses. If you’re tired, running late, don’t have time to cook or whatever your healthy meal is ready and waiting for you . Here is what I do.
For breakfast I usually keep it simple. I scramble some eggs and the other day I roasted some green and red bell peppers and jalapenos and mixed in some pickled jalapenos as well to give my eggs a little kick. I’ll post exactly how I roasted my peppers later this week.
I also have 16 oz beet, orange and apple juice in the morning. Eggs obviously take no prep time. I usually buy organic, cage free eggs from the farmer’s market along with the rest of my fruits and veggies for the week.
Pictured above are dry roasted peanuts, fresh fruit and Lara Bars. I eat a snack around 10:30or 11 am. I’ll have one of the three things pictured above, it just depends on what I’m in the mood for.
For the past month or so I’ve been on a salad kick for lunch. I have organic mixed greens, carrots, cucumbers, feta cheese with a little olive oil and balsamic vinegar. I also drink a mean green smoothie that consists of 2 cups of spinach, 1/2 apple and 1/2 a pear. It doesn’t seem like a lot of food but actually keeps me full for a few hours!
If I get hungry again before it’s time to leave work I have another snack. Usually it’s a hand full of peanuts.
Ok y’all, I’m going to keep it real. Dinner is one of the hardest meals for me to eat something 100% healthy. I like to have something filling and sometimes my cravings get the best of me. But I’m trying really hard to eat 100% clean during the week and take the weekends off.
I like to have more than one option for dinner. This week I made vegetarian chili and tortilla soup. I also had stuff in the fridge to make some yummy healthy Mexican pizzas with black beans, salsa, guacamole and a sprinkle of cheese. Usually I’ll have a glass of red wine with dinner but I’ve been trying to cut back so I’ve been opting for herbal tea. Not quite as good as a glass of red, but it works.

So that’s my week in food. On the weekends, I eat whatever I want. The sad part is that since I generally eat healthy I rarely have a junk food free-for- all on Saturday and Sunday. I usually stick to what I eat during the week…well plus a few more glasses of wine. Don’t judge me!
